A summer tradition in Kyoto, the 'eel cuisine' is a masterpiece of traditional and skilled techniques. The precise knife work of cutting the conger eel with a special knife reveals and cleanly cuts the small bones hidden in the fresh white flesh, truly showcasing the artisan's craft.
