Mr. Takada, the third-generation owner, continues to take on new challenges while maintaining the traditions established in 1974. He took advantage of the disaster in Corona to focus on Saga's ingredients, and commercialized homemade dashi (broth) made from warasuboi, a rare fish from the Ariake Sea. The all-purpose dashi, developed in cooperation with a company in the prefecture, is attracting attention as a new specialty that allows customers to enjoy the taste of the restaurant at home.
