The owner of this restaurant, who came from a ryotei (traditional Japanese-style restaurant) background, has been working hard for the past 13 years at this restaurant on the outskirts of Nishi-Azabu. Sake drinkers will love the variety of light dishes, shellfish, and fish roe that are available at "Zushi Hirose," a favorite of connoisseurs. The restaurant offers a whopping 12 kinds of kombusame (kelp sashimi). The restaurant uses kelp from its ryotei (traditional Japanese-style restaurant) background, and uses different methods of aging and cured fish depending on the ingredients. The snacks and serving utensils are also prepared in a ryotei style. It is pleasing to both the eyes and the palate. The dried bonito zuke is rolled with rakkyo and the conger eel is grilled in three different ways. The first time I had the dish of simmered golden threadfin bream with liver and roe, which was so tender and tasty that it made me want rice. The knife work on the seafood was also excellent. The sardine, red clam, and squid were beautiful. I was surprised at the price. After enjoying the snacks, we moved on to the nigiri. The small rice was a little chewy and the aroma of vinegar combined with the taste of the finished seafood left a long and deep aftertaste. The Kinmeki was also served as a sashimi. The fatty taste of the fish is just the right amount. The chef who says he doesn't serve tuna because it is just cut and boring is not a sushi chef but a chef. The soup stock of the bowl is also different. And the friendly and fun personality of the owner makes you stay longer. The restaurant's location in Nishi-Azabu makes it a comfortable place for young foreign capitalists, Minato-ku men, beautiful women, and a glamorous clientele. We recommend this restaurant to those who have been to many high-class sushi restaurants, as well as to sake drinkers, as it is a sushi restaurant with a completely different Japanese cuisine. The price is very reasonable, about 15,000 yen per person for the photo plus 3 dishes and a lot of sake.
