Iigura

We offer a new style of sushi while maintaining the tradition of Edo-mae sushi. The restaurant's attention to detail is evident in the use of white vinegar, red vinegar, and brown rice black vinegar for the rice, as well as the use of boiled soy sauce and water salt to match the ingredients. The signature dish, "Steamed Abalone Temaki," is a black rice rice topped with truffles, offering a variety of textures and aromas.

The restaurant's interior is a modern expression of traditional Japanese beauty, with its Kumiko patterned walls, hemp leaf pattern, and counter made of 300 year old Japanese cypress. The high ceilings and sense of openness create an extraordinary atmosphere, allowing diners to enjoy their meals in a relaxed atmosphere. The entrance to the restaurant has no door and is characterized by its innovative style with a noren curtain made of real hemp.

Iigura is located on the second floor of Jannu Tokyo, the world's first sister brand hotel of luxury hospitality pioneer Aman at Azabudai Hills. The restaurant was opened with the aim of reinterpreting the tradition of Edo-mae sushi and serving it in a contemporary style.

Chef Kunihiro Shinohara trained at renowned sushi restaurants in Japan and abroad before opening Iigura. While preserving the tradition of Edo-mae sushi, Iigura offers a modern approach to its cuisine. His attention to detail, from the selection of ingredients to the cooking method and use of utensils, provides visitors with a new sushi experience.
