In the omakase kaiseki, we blend the early, the peak, and the lingering flavors, unfolding like a story from the appetizers, soup, sashimi, grilled dishes, main courses, rice, to desserts. The umami of the clear first broth, the aroma of charcoal grilling, and the steam of freshly cooked rice in a clay pot — through a taste creation that utilizes negative space, we vividly highlight the contours of the ingredients. The name 'Gokei' embodies the desire to capture the seasonal scenery within the dish and to savor it with all five senses.
