The French restaurant kimura, located in Omachi, Akita City, was opened in 2018 by owner-chef Kazunori Kimura.

Chef Kimura is a native of Akita Prefecture. After graduating from a culinary school in Tokyo, he gained experience at renowned restaurants in Aoyama and Hiroo, served as head chef at an Italian restaurant in Komazawa University, and worked as sous chef at the French restaurant "THE MOON" in Roppongi Hills. He then returned to his hometown to open "kimura" with the desire to serve dishes using Akita ingredients in Akita.
