Made with handmade black koji and sweet potatoes cultivated by our own farm (Agricultural Corporation 'Reviving the Earth Association') and local producer groups, using sweet potatoes harvested and processed on the same day. Yeast is made in traditional 'kame' and aged for over 2 years for a mellow flavor.
Kagoshima, Nishi Brewery, Alcohol content: 25%, Ingredients: Kogane Senkan, Rice Koji (Yellow). This 'Tominobouzan' made the name of Nishi Brewery widely known. Even when opened, it does not have the typical sweet potato aroma of previous sweet potato shochu, but instead, a refreshing citrus aroma reminiscent of mandarin and lemon wafts through. Miyazaki Sato Shōchū Distillery Alcohol Content: 25% Ingredients: Barley (two-row barley) and Barley Koji (white). It has a subtle aroma of barley. The taste is soft and round, making it delicious and not tiresome to drink. It is recommended to enjoy it on the rocks or with water.
Nara Ume no Yado Sake Alcohol Content: 7% Ingredients: Wenzhou mikan, brewing alcohol, sugars, sake, citric acid. A dessert-like drink packed with the flesh of Wenzhou mikan!
