Matsumoto uses the "best" conger eel from Tsushima, Nagasaki Prefecture, which is characterized by its fragrantly seared skin and fluffy white meat. The tuna, which is aged to amplify its flavor, comes from "Yamayuki" with an emphasis on quality.
