We grilled the Moksal of the 'Golden Pork' brand from Saiboku over an open flame. Moksal refers to the part of the pig from the neck to the shoulder loin, known as 'buttoro' in Japan. It is tender with just the right amount of marbling, and the richness expands with each bite.
