Please enjoy Kyoto-produced black-haired wagyu with a special miso sauce. Accompanied by plenty of vegetables such as napa cabbage and shiitake mushrooms, along with a raw egg.
It contains seasonal vegetables and konjac shrimp. The picture of the bush warbler is also drawn with miso powder, so you can enjoy it.
This miso is made with high-quality rice koji using twice the amount of soybeans, characterized by the gentle sweetness and low saltiness produced by the rice koji, as well as its beautiful pale yellow color.
The traditional preparation passed down from a family of farmers for over a hundred years uses handmade koji made with the traditional 'morokama' method. Currently, we prepare boiled beans cooked with firewood in a rare 'okudo' during the winter season. The soybeans used are the highest quality 'Toyomasari' from Hokkaido.
