The sumptuous "chin broth," a high-end Kyushu ingredient that gets its name from its "jaw-droppingly delicious" taste, is used. Only the small intestines of domestic beef are carefully selected to give the dish a tender texture, and the sweetness and umami of the high quality fat gradually melts out to create a luxurious flavor.
