Founded in 1885 in Kujo, Minami Ward, Kyoto City. For 130 years, this long-established restaurant has been making Kyoto yuba for famous kaiseki restaurants in Kyoto. A soybean-derived food called 'Kyoto yuba' has been loved since ancient times and used in vegetarian cuisine and kaiseki cuisine. It was introduced to Japan as a vegetarian dish during the Kamakura period and was a high-quality ingredient allowed only for the imperial family and temples on that day.
Using Kyoto yuba from Yubasho, established in the 18th year of the Meiji era, and soy milk. Kyoto yuba is gluten-free! Kyoto yuba is a unique superfood from Japan, rich in nutrients such as plant-based protein, soy isoflavones, and sanipon! The sauce for the okonomiyaki uses high-quality soy milk and vegetable broth. The nutrients from the vegetables combine to transform into a 'treasure sauce'! The vegetables used will change with the seasons, allowing you to enjoy the flavors of each season!
Okonomiyaki is made without wheat flour and baked with rice flour. "I want those with wheat allergies to enjoy it too. But it has to be delicious, or it doesn't mean anything!" This was the thought behind the trial and error that led to its completion. Additionally, a large amount of "Nagaimo" is used to create a crispy outside and a fluffy, creamy texture inside. Once you try it, you might say, "From now on, Okonomiyaki should be made with rice flour!"
We adjust the mixing method, heat level, and baking degree while assessing the daily changes in the moisture content of the cabbage and the stickiness of the dough. Using a 20mm iron plate with minimal temperature variation, we bake slowly with our team. Our proud 'Grill Master' delivers the best 'crispy on the outside! fluffy and melty on the inside!'
