Our restaurant uses 'Tochi-usu', a brand of soba flour produced in Tochigi Prefecture, grown in the same environment as the famous soba from Hitachi-Ota, Ibaraki Prefecture. Additionally, our soba, made using a special method, has a higher water content compared to other 100% soba noodles, making it juicy and elastic. This allows us to shorten the cooking time, preserving the original flavor of the soba, which is typically sensitive to heat and can be lost.
This is a recommended menu where you can enjoy the proud tempura that brings out the flavors of seasonal vegetables and shrimp, along with 100% soba.
