We use Sangen pork. After simmering it well, we slowly grill it over charcoal on low heat. The aroma of the charcoal is irresistible! Originally, it was made as a side dish for ramen that I received as a souvenir, so I created it as a staff meal.

When we first opened, it was the kind of tsukune that you would imagine skewered, but as customers started ordering 4 or 5 at a time, we thought, why not combine them all into one? That's how it became the hamburger-like tsukune we have today. Customers who remember the original tsukune from when we opened say it's a lazy hamburger (laughs).
