While the melting point of common beef is 30-40℃, the melting point of Matsusaka beef is around 17℃, giving it a smooth texture that melts on the tongue. When quickly dipped in hot water of about 80°C, a sweet and elegant aroma unique to Matsusaka beef called "wagyu-ko (Japanese beef aroma)" appears, which whets the appetite.
