The sea urchin topping is 4,480 yen (including tax 4,928 yen) and is a proud soba dish lavishly topped with sea urchin. The noodles are a specially made additive-free sesame soba that has been pursued to match our restaurant's kasu soba. We have created a fine noodle with a hand-cut feel, finished with a subtle sesame flavor. By applying a rapid freezing method to the freshly made soba, we use a special technique that prevents the soba from clumping together.
The Spicy Kasusoba, which is popular as the number one dish at our Susukino location, allows you to choose the spiciness level from 1 to 30. Beneath the spiciness, you can also taste the rich umami of the broth. 'Kasu' refers to a food ingredient called 'oil kasu,' which is made from beef small intestines that are carefully deep-fried at low temperatures. It features a unique texture that is crispy on the outside and juicy on the inside, with a flavor that becomes addictive. It is also a delightful ingredient rich in collagen. Furthermore, the oil kasu we use is exclusively from Wagyu beef, ensuring there is no unpleasant odor at all!
