An exquisite flavor and rich aroma that can only be achieved through carefully selected ingredients and methods. The importance of 'ponzu,' which supports the taste of fugu cuisine, is an eternal theme for us. Our 'ponzu' is made with yuzu and sudachi vinegar from Awa (Tokushima Prefecture), kombu from Rishiri in Hokkaido, and soy sauce from Kyushu. All ingredients are extracted gently from fresh fruits to avoid bitterness, and soy sauce is added in one go, allowing it to mature for ten days while we carefully monitor the perfect balance of flavor. The balance of acidity and sweetness, fresh aroma, and salt concentration... the taste is solely pursued in harmony with 'fugu,' resulting in the completed Tokufuku 'ponzu.'
Unique collagen bouncy texture.
A beautifully refreshing thinly sliced dish that showcases the skill of the craftsman. Using the flesh close to the skin, it is a classic plate that can be enjoyed in a light and summery way.
Thickly sliced meat of the tiger pufferfish quickly blanched in hot water, prepared in a tataki style. This stamina-boosting pufferfish sashimi features thick cuts of meat close to the bones, known for its strong chewiness and crunchy texture. The 'shimo-furi' technique involves briefly passing the fish through boiling water for 5 seconds and then immediately chilling it in ice water, resulting in a firm exterior and concentrated raw flavor inside! A special spicy sauce made with ponzu, grated momiji daikon, garlic, and chili peppers stimulates summer appetites.
A popular menu item seasoned with Tokufuku's special garlic soy sauce. Its fragrant aroma instantly stimulates your appetite, making it a perfect dish for summer. Enjoy the deliciousness packed with stamina, where the scent of charcoal intertwines with the umami of fugu.
The sake used for hirezake is carefully selected by the manager. It is served with a flame.
