Origin: Niigata Prefecture, Takanoi Sake Brewery. Rice used: 60% Gohyakumangoku. Recommended as a food pairing sake, it has a mild and soft mouthfeel, with a clear and beautiful flavor. While it has sufficient umami, it is light and has a clean aftertaste.
Origin: Miyagi Prefecture, Sendai Izawaya Katsuyama Sake Brewery ● Rice used: Hitomebore ● Sake meter value: Not disclosed ● Acidity: Not disclosed. In 2019, Katsuyama Sake Brewery became the best in the world. All of their sake is produced with meticulous attention to detail, resulting in limited production and few restaurants that handle it. The sake quality is clean and transparent, not interfering with meals, making it the king of sake.
