Slowly simmered from Omi beef shank and finished to perfection.
Soft-shelled turtle from Lake Biwa. The meat is shredded after simmering and mixed into the gnocchi, then fried and floated on top.

We prepare our special tartar sauce, rich in eggs, after receiving each order.
We make a sauce using the oyster meat, its juice, and our proud double consommé. Then, we mix in the cappellini, which has been boiled and rapidly cooled, with a refreshing hint of lemon.

100g of Omi beef fillet is breaded and fried to medium. Served on thick, nicely toasted bread with fermented butter and mustard. The finishing touch is a generous amount of our special demi-glace sauce. You can also enjoy it in the restaurant.
A pudding made with heavy cream and eggs instead of milk. It is frozen, and once set, caramel is poured on the surface to harden. The aroma of Madagascar vanilla is captured within. A rich flavor greets your mouth, followed by a pleasant bitterness and the fragrant taste of caramel that spreads.
