The deliciousness of oden is a marriage of the 'dashi' and the umami that seeps out from the 'tane'. The 'dashi' is made every morning from Hidaka kelp and bonito flakes, seasoned with sun-dried salt 'Umio' without using soy sauce. The 'tane' is simmered in this 'dashi' to extract the umami that seeps out from the 'tane', which is then absorbed back by the 'tane'. Please enjoy this harmonious and exquisite flavor!

A popular menu item since the opening of Fuku wa Uchi. The beef tongue is simmered for several hours until it becomes tender. Then, it is slowly cooked in a cast iron pot to allow the special demi-glace sauce to infuse its flavor. To reveal a secret, the hidden ingredient, Hatcho miso, is the key, making it 'Fuku wa Uchi's braise.' A delicious blend of Japanese and Western flavors! At Fuku wa Uchi, we offer a brand of chicken called Nichinan Chicken. Nichinan Chicken is raised in Nichinan City, located near the southernmost part of Kyushu, Miyazaki Prefecture, along the Nichinan coast blessed by the sun and sea breeze facing the vast Pacific Ocean. The meat, which has reduced fat, is a beautiful and glossy pink color, tender and juicy, yet has a rich texture and flavor. It is also characterized by a higher content of vitamin E compared to other chickens.
