Integrated production from breeding to fattening is carried out on the same farm. The deliciousness of the black-haired Wagyu, raised with the love of the mother cow and without stress, is exceptional. Furthermore, we are engaged in a unique initiative in Japan, working with a single producer to implement 'Tajima lineage', 'fine-grained female cattle', 'long-term fattening', 'one head use', and 'one head dry aging'.
Have you ever experienced the sweetness of beef and the aroma known as Wagyu fragrance? This aroma is born from a commitment to lineage and a long feeding period. Additionally, by applying a moderate breeze and performing a drying maturation to remove excess moisture from the meat, microorganisms work to break down proteins, amplifying the natural amino acids that are the umami components. The combination of sweetness, umami, and aroma completes the 'delicious' experience!
The aging at Tajimaya is different from simply making tough meat tender. We want to remove excess moisture to enhance the flavor of the black-haired Wagyu, female cattle, raised in designated farms with pure Tajima lineage! This is the process of dry aging. By reducing moisture, the umami is concentrated, and you can enjoy the traditional black Wagyu with increased sweetness of the fat and the aroma of Wagyu.
