The deliciousness of the black-haired Wagyu, raised without stress and under the affection of the mother cow, is exceptional. Furthermore, we engage in a unique initiative in Japan that involves working with a single producer to manage 'Tajima lineage', 'fine-grained female cattle', 'long-term fattening', 'one head usage', and 'one head dry aging'.
Have you ever experienced the sweetness of beef and the aroma known as Wagyu fragrance? This aroma is born from a commitment to lineage and a long period of raising. Furthermore, by applying a moderate breeze and performing a drying maturation to remove excess moisture from the meat, microorganisms work to break down proteins, amplifying the natural amino acids that are the umami components. The combination of sweetness, umami, and aroma completes the 'delicious' experience!
The aging process at Tajimaya is different from simply tenderizing tough meat. We want to remove excess moisture to enhance the flavor of the Tajima-bred black-haired Wagyu heifers produced at designated farms! This is the purpose of dry aging. By reducing moisture, the umami is concentrated, allowing you to enjoy the traditional black-haired Wagyu with increased sweetness of the fat and the aroma of Wagyu.
