This is a cozy space with only six counter seats, where you can enjoy your meal in a relaxed atmosphere. The course starts with finger food, featuring a light dough shaped like Kumamoto Prefecture, topped with the flavor of spicy lotus root, making for a fun start. A dish of fish caught in Amakusa, aged with nerve-killing techniques, is beautifully garnished with beets and cherry tomatoes, packed with umami. The soup made from Ueki eggplant pairs perfectly with the moist, homemade focaccia, making you want to ask for a second helping. The main dish, Higo red chicken, is cooked gently at a low temperature, and the seasonal vegetables and mild cream sauce create a delicious lingering taste. Even the dessert, infused with the aroma of herbs, and the fresh herbal tea were carefully prepared, allowing us to fully enjoy the blessings of Kumamoto until the very end.
