Uzaku is a vinegared dish made with eel and vegetables such as cucumber and myoga. It is eaten by combining grilled eel with cold vinegared vegetables, making it a refreshing dish.
Liver stew is characterized by the unique umami and bitterness of the liver, but it also has a high-quality fat content and a unique soft texture that is one of the charms of eel liver, which is not found in grilled liver.
