Could be a great restaurant for Kyoto x Sushi @ Imadegawa | Happy eating delicious food! I heard about this restaurant from a gourmet friend, and then I heard about it from another friend... I remembered that it must be a wonderful restaurant to hear from two gourmets! But such a thing is a mysterious fate, isn't it? We had just decided to go out for sushi, and yes, there was a restaurant we wanted to go to! The day of the event went by very quickly and smoothly from there! Mr. Fukuyoshi The nearest station is Imadegawa Subway Station It's a bit of a long walk, so we took a cab. But I couldn't catch a taxi and I was a little late.... But he was very kind to help me... I'm very sorry. Both of them trained at Sushi Restaurant Hirano in Kitashinchi, Mr. Kondo went to Shanghai to promote Japanese sushi, and Mr. Fukuda opened Fukuyoshi in Nishitenma. They run this restaurant together! The restaurant offers only a 20,000 yen omakase course in the evening. Toast with plum wine with soda! There were two kinds, and we were allowed to choose one! The explanation of the sake was very detailed and easy to understand! Seko crab It was nice to start with crab! It's dressed with spinach and cauliflower puree. Warm and tender, just like human skin! There was a lot of crab meat in it! Kamasu Sumasu (trout) Sumashi comes in a beautiful bowl. The charred barracuda was deliciously aromatic and tender! The wood ear from the original tree was also included, and it was very crunchy! You can't help but roar when you drink the delicious broth! Sashimi Hirame and kingfish sashimi! How pleasant this slightly elastic texture is! The leatherfish is wrapped around the liver and served with ponzu (Japanese sauce made from ponzu citrus juice)! The Himi cold yellowtail is so fatty and shiny! Wrap the buri radish in a thinly sliced daikon radish and you have a complete dish! The fatty taste of the yellowtail is well neutralized by the senmaida daikon! For my second glass of sake, I decided on sake! We asked for a sake that was smooth and easy to drink, and we were served "Kantensho Saika"! It is a very rare sake! I don't know what it is about sake, but it was very delicious! Rice is now cooked! This rice is cooked in an okudo-san! Freshly cooked rice balls! Onigiri made with hot rice! Accompanied by kombu (kelp)! The rice is shiny and has a rich aroma! The rice is totally different from the other rice balls! The rice is also made right in front of your eyes! Momo crab! This is a special Matsuba crab that does not shed its skin! The meat is sweet and the miso is very tasty! Crab meat and miso served with shrimp and potatoes in a starchy sauce. The glass of crab meat was served with a glass of miso and a glass of crab meat with a glass of vinegar. Nigiri from here Tuna Tuna Horse mackerel The rice is made with white vinegar, which is mild and goes well with all the ingredients. The first tuna was so fatty that you would think it was toro (fatty tuna)! The first tuna is so fatty and delicious that you may think it is toro (fatty tuna)! The aoi ika is sweet, and the horse mackerel is also fatty and tender. Milt The gingko nuts are not too strong, and the soup stock is gentle, which makes you feel at ease. Red clams Tiger prawn Nodoguro (sea bream), kombu zushi (sashimi), seared skin The red clam is not watery but crispy. The tiger prawn is freshly boiled, slightly warm and sweet! The nodoguro is freshly boiled, slightly warm, and sweet! The Spanish mackerel is grilled with the scaly scales still attached, but the meat is a little crispy, but I don't mind at all, the meat is so plump! It's great to eat homemade kara-sumi and drink sake! Hokkaido sea urchin Dark-colored sea urchin is rich even when eaten! Boiled conger eel with salt and sauce It is a pleasure to enjoy both salt and sauce! The sea urchin is so fluffy and melts in your mouth! If I had to say which I prefer, I'd say I prefer the salted version. Dried gourd roll Firm kanpyo (dried gourd) The wasabi is sometimes spicy. ■Aka-dashi soup stock The shijimi clam soup is delicious! I couldn't tell it was shijimi at first because it was about the size of a small clam ■Tamago (egg) Eggs filled with fish paste. The recipe is the same as Hirano-san's. Moist and slightly sweet! ■Dessert Fresh and sweet pears and vinegared muscat! I don't know if Kyoto is mainly Japanese food culture or not, but I don't hear much about sushi. But I have a feeling that this place will become a famous restaurant! I am very much looking forward to your future activities! The atmosphere in the restaurant is great even now, but I hear that it will be even more powerful. Thank you for the food!
