Enjoy Chef Keitaro Nakamura's seasonal dishes that make the most of seasonal ingredients. VAPEUR's specialty, "Steamed Seafood Platter "Fluidomer"" is a must-try dish that features fresh seafood such as oysters and prawns directly shipped from the region and steamed to a soft and fluffy texture.
A casual small plate course featuring VAPEUR's recommended homemade charcuterie as the main dish. The course is designed to be shared by two people. We carefully prepare dishes with seasonal ingredients using the technique of Frens cuisine.

<100% Chardonnay> A masterpiece of Taittinger, referred to as a gem, produced only in years when grapes of exceptional quality are harvested, suitable for vintage champagne. Aromas of lemon and ripe citrus fruits, with nuances of white flowers, brioche, honey, and minerals. The 2007 vintage is characterized by a refreshing and elegant style.

<Blye / Sauvignon Blanc-Muscadelle> From biodynamic vineyards owned by Bruno Martin. Aged in barrels, fermented in barrels. Elegant aromas of yellow flowers with richness of honey and butter. Refined acidity typical of Sauvignon Blanc and a deep finish.
<Burgundy Meursault / Chardonnay> A small domaine of only 8 hectares. The vineyards are almost entirely organic, expressing the natural freshness of the grapes. It has the richness characteristic of Meursault and the structure typical of 2015, along with a rich minerality.

<Loire / Sauvignon Blanc> Sauvignon Blanc from the upper Loire region. A refreshing aroma reminiscent of herbs and a crisp acidity. A dry white wine that also possesses a delicate richness.
<Alsace / Gewürztraminer> The appearance is a pale greenish-yellow. It has an enchanting aroma of lychee, jasmine, white peach, and white rose. There is also a hint of spice. The fruitiness and acidity are wonderful, with a smooth mouthfeel. A slight bitterness from the fruit skin tightens the aftertaste.
<Spain - Rias Baixas / Albarino> The most noble white grape in Spain. Rich in fleshy aromas of apricot and peach, with an exotic taste.
<Spain Basque / Ondarrabi Zuri 80%・Petit Courbu> A fruity sensation reminiscent of pear, apple, and grapefruit, with a refreshing herbal aroma. The acidity is lively and fresh, and the light, crispy bubbles stimulate the appetite. It pairs particularly well with seafood!
<Bordeaux Blaye / Merlot-Cabernet Sauvignon> Located on a small hill in Blaye, Roland La Garde offers pure and well-balanced fruit flavors reminiscent of blueberries and blackcurrants. The tannins are fine-grained, providing a deep and complex taste.
<Pessac-Léognan / Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot> A sweet aroma of ripe plums and cherries, with a hint of earthiness and elegant tannins. The finish is long, leaving a deep impression on the palate. A classic Bordeaux wine with a traditional taste.
<Margaux / Cabernet Sauvignon, Merlot, Cabernet Franc> A third growth château from the Margaux village. The second wine that inherits the elegant style of Giscours.
<Burgundy / Pinot Noir> The heart of Burgundy, Beaune. A classic Beaune wine produced by the historic Drouhin family, who actively engage in organic farming. It has rounded acidity and a soft mouthfeel, with a long and elegant finish.
<Bourgogne Roncevaux Village / Pinot Noir> The best location situated at the lower slope across the prefectural road from the Grand Cru Chambertin. It has a rich and juicy fruit flavor reminiscent of small cherries and blackcurrants, with concentrated umami.
<Burgundy Côte de Nuits / Pinot Noir> Since 2001, fully converted to organic farming. To express the delicate and elegant character of Pinot Noir, the proportion of new barrels is kept low. Grapes from higher altitude areas are also used, adding beautiful freshness. A well-bodied Pinot Noir.
<Sud-Ouest / Tannat, Cabernet Sauvignon, Cabernet Franc> Although Madiran is thought to be 'rich and powerful', it is originally an elegant and smooth wine with a well-balanced profile. This is the 'original' Madiran that teaches us its true flavor.
<Ilregy / Tannat-Cabernet Sauvignon-Cabernet Franc> A cooperative that owns 60% of the total area of Ilregy. It is greatly loved in the local Basque region, with only a small amount exported. <Chile, Maule Valley / Carignan> The so-called origin designation system for Carignan, which has not received much attention for a long time. It is a producer with a long history in Chile. It meets strict regulations such as being over 30 years old and having a maturation period of more than 2 years. Today, Chilean wine is attracting global attention.
<California, Sonoma / 99% Zinfandel> Aromas of fruits like raspberry and fig, with a spiciness from pepper. The addition of vanilla notes from the barrel contributes to a robust yet delicate flavor profile. A long and firm finish can also be felt. Produced in small quantities with a focus on craftsmanship.
