Our Satsuma Age uses Alaska pollock, threadfin bream, and red sea bream. It features a soft texture with just the right amount of elasticity and a gentle, spreading umami and flavor. The fish paste is kept to a minimum with binders, allowing the natural protein of the fish to shine through. We use the highest quality rapeseed oil made with traditional cold-pressing methods, resulting in a light and gentle frying that brings out the umami. You can fully enjoy the flavor of the ingredients. Please enjoy the traditional taste that has been passed down since our establishment in the 14th year of Taisho. All the ingredients for the broth are the highest quality domestically sourced. We use mineral-rich water and mellow natural sun-dried salt. We have made all the materials—water, broth, oil, and sun-dried salt—with no compromises and with great care. The third-generation craftsman hand-makes each piece with attention to detail.
