Since the era when white koji was the mainstream, black koji has been used without change. As a result, it has a rich taste typical of black koji, but it is not too strong and is very well balanced, attracting a large number of enthusiastic fans. The sweet potatoes used are the common Kagoshima-grown Kogane Sengan variety. With a retro label and a standard production method, it has a simple taste reminiscent of traditional sweet potato shochu.
The raw material for the authentic shochu 'Kirishima' is the sweet potato 'Kogane Senkan' cultivated in the vast sweet potato fields of southern Kyushu. The water used for brewing and dilution comes from the huge water source 'Kirishima Retskasui' located 150m underground in the Miyakonojo Basin in southern Kyushu. It contains an appropriate amount of minerals and carbon dioxide, almost no iron, and provides optimal conditions for the cultivation of yeast fermentation.
The aroma of sweet potato shochu comes from the terpenes derived from sweet potatoes and the fatty acids from rice koji. Ikko-sha enhances the aroma of sweet potato terpenes by using sweet potato koji instead of rice koji.
