"Grilled Fish" is our restaurant’s signature original beach-grilling dish!! The secret is our homemade miso-soy sauce glaze!! This year, we’ve even added some luxurious wild "fugu" (pufferfish) to the mix♡ The aroma is simply irresistible. It really feels like you’re eating with your nose♪ The only downside is that it goes so well with drinks! Please give it a try. *Please note that depending on the day, we may substitute the gando with locally caught yellowtail amberjack, which is in season and highly recommended during the summer. We appreciate your understanding in advance.
Dig into some shabu-shabu made with wild gando fish shipped straight from Nanao, Noto. Noto-bi’s hot pot is delicious even in the summer!! We’ve been getting orders every day in August for years, and since there was so much demand, we’ve started offering this starting this year. Please give it a try!

The renowned luxury fish, the nodoguro!! We’ve prepared it salt-grilled, and we’ve also marinated the winter delicacy of Noto—the kabo-gani—in soy sauce!! Wait, what!? You get to eat both of these!? Really!? Really!? It’s true!! This is a limited-time course featuring our specially prepared “Noto-grown soy-marinated Kōbako crab,” available only while supplies last. We look forward to your patronage.

I still remember the excitement when I first drank it!! The aroma, the mouthfeel, the smoothness, the aftertaste. Everything is on a different level!! I didn't know such sake existed!!
Someone said, 'If you were told to choose just one from the many sake options, I would not hesitate to choose this one!!' ... and that was the famous sake Tengumai from Ishikawa, a Daiginjo.
With each sip, the flavor of the sake and the aroma of the rice fill your mouth with a delicious taste. Tonight, enjoy this with some buri shabu. ... It is a moment of happiness.
Sake Degree +12. This is the driest sake in our shop. However, unlike the common dry and thin sakes, when you taste it, it feels light!? ... Just when you think that, the gentle umami of rice follows in the aftertaste. This is our popular sake!!
When I was young, I thought there was only Zougen sake. It is that much of a major sake in Noto. Unlike the second-class sake I always drank, this Junmai has a strong umami flavor of rice, and personally, I think it's great even when warmed up. When you take a bite of the black squid, it's a perfect match!! It captures the taste of the Japan Sea in the severe cold of Noto.
This is a famous sake used by a well-known restaurant in Kanazawa. It has a relaxed and calm flavor, just as the name suggests, a truly leisurely taste. Personally, I also recommend it warm or hot.
As you bring the ochoko to your mouth, a wonderful aroma of cedar wafts in. Please enjoy it cold!!

Fine, elegant, and with a deep and rich aftertaste that pairs excellently with the dishes.
The skin is lightly cooked, and the flesh begins to curl, turning a whitish color, which is the perfect time to eat. The umami that spreads in your mouth is truly supreme. Please be sure to try it at least once. (Due to procurement and preparation, we kindly ask for reservations to be made at least three days in advance.)
The fatty flesh of Noto's natural yellowtail is briefly dipped in broth for just 2 seconds and enjoyed with our original 'Noto Mi's Yellowtail Shabu Ponzu' sauce. No words are needed... The highlight is the final rice porridge. Everything up to this point has led to this moment!! It is such a flavor.
This is the ultimate topping menu!! We absolutely want customers who order 'Buri Shabu' or 'Tako Shabu' to try this dish. Enjoy fresh natural cod milt from Noto, cooked shabu-shabu style to your liking... You might think that's unfair! But this dish reaffirms that temperature is one of the keys to flavor. The ultimate expression of mild flavor... I believe that is how the flavor of octopus is represented. The texture of octopus shabu shabu changes completely depending on how well it is cooked. Enjoying that is also a pleasure. Please enjoy it with 'Notomi's Buri Shabu Ponzu'!
