The seafood and pork bone broth, which is both rich and mild, is made by slowly simmering the animal ingredients for a long time to extract and dissolve all the flavor of the ingredients. The soup is then infused with dried bonito, dried sardines, mackerel bones, and other seafood to bring out the richness and umami of the soup. We use custom-made extra-thick noodles to keep up with the richness of the soup. The thicker the noodle is chewed, the more the flavor of the wheat spreads in your mouth.
