The beginning of Morioka cold noodles started when a chef from Pyongyang made cold noodles in Morioka. Instead of using pheasant, the soup was made with local beef, and the water kimchi evolved into radish and cabbage kimchi, resulting in the current style. Among them, the cold noodles from Pyon Pyon Sha are carefully selected with a commitment to valuing all natural blessings. In addition to the special features below, they are made with a focus on local vegetables, natural salt, and water.
The smooth and chewy noodles made from finely ground potato starch and wheat flour are a characteristic of Morioka cold noodles. To enjoy the unique texture that only freshly kneaded dough can provide, we make the noodles fresh for each order. We serve them freshly made.
A soup slowly simmered with powerful umami from black wagyu beef belly, beef bones, and sweet chicken carcasses, finished with natural salt. The umami is concentrated, and while it has depth, the refined clear taste is born from removing all excess fat.
Considering that typical radish and cabbage kimchi can interfere with the flavor of the soup, Pyon Pyon Sha prepares kimchi specifically for cold noodles. The addition of fruit results in a light and refreshing radish and cabbage kimchi.

Our contracted farmer, Takusari Farm, prioritizes protecting the natural environment and land, and produces delicious Sanchu daily through hydroponic cultivation using the clear underground water from the Kitakami Mountains. The rice used as the main ingredient is sourced entirely from the contracted farmer Tanegasawa Farm. It was brewed with local water from Morioka Handmade Village. Unlike the common methods of pasteurization or low-temperature sterilization, it retains yeast and lactic acid bacteria, resulting in a healthy and refreshing taste. The bubbly texture is a testament to the living yeast.
