Mr. Udatsu was raised in a family that ran a small butcher shop in Kunitachi City, Tokyo, and from childhood he frequented the neighboring sushi restaurant and became captivated by the appeal of sushi. After graduating high school, he trained at sushi restaurants in Kanda, Ginza, and Nishi-Azabu, and in 2019 opened "Udatsu Sushi." He is particular about the quality of the fish and the rice; he deals directly with local farmers and finishes his sushi with specially selected rice and carefully chosen vinegar. Upholding his convictions as a sushi chef, he prepares each piece of nigiri with heartfelt care for every ingredient.
