【Fukuoka】
Since opening in June 2019, it has quickly become an extremely difficult-to-reserve restaurant, representing Fukuoka with its innovative cuisine.
By 2025, reservations are already fully booked, indicating its popularity.
Chef Kaneda, originally from Shimonoseki City in Yamaguchi Prefecture, honed his skills in French cuisine at "Maison de Yoshida" in Fukuoka and "Kitano Hotel" in Kobe, before moving to Bangkok's "Gaggan" and acquiring Japanese culinary techniques at "Ryugin" in Tokyo. He is a skilled chef who utilizes his past experiences to incorporate innovative ideas and techniques that do not overly adhere to fixed genres of French or Japanese cuisine.
Before the meal begins, Chef Kaneda kindly checks with the women, asking whether they prefer the deep-fried pufferfish with bones or without, showing great consideration.

"I don't want this course to end yet," I felt a longing halfway through, as the content was wonderful, and everything was delicious from start to finish. The pairings of sake, wine, and gin offered a unique lineup that never got boring.
Chef Kaneda's personality is also wonderful, as he remembers each customer well and shows great consideration.

The sweetfish spring rolls were served with a delicious liver sauce, and the consommé of abalone and scalloped abalone was tender and full of smiles. The white corn jelly was a wonderful technique to bring out the sweetness of the corn, and the pike conger and Kamo eggplant were an excellent combination.
