It seems that the soba flour used changes weekly, which adds to the excitement each time I visit. The noodles are elegant in appearance, have a pleasant aroma, and possess a firm elasticity when bitten. The dipping sauce is mildly sweet with a sharpness that pairs very well with the noodles. The condiments, such as real wasabi and spicy daikon radish, are of high quality and enhance the flavor even further. The soba broth after the meal is rich and comforting. I could feel the attentiveness of the staff, making for a very pleasant experience.
