Chikamatsu

At Chikamatsu, a sushi restaurant in Fukuoka, rice vinegar is used to give the rice a gentle flavor. The gentle acidity of the kohada is particularly impressive, and portions are small for easy eating. Due to the corona, the restaurant procures more fish than usual and offers a wide variety of ingredients. You can enjoy sushi with attention to detail and balance.

Upon being greeted by a wisteria that evokes the four seasons and entering the restaurant, one is greeted by a dark, calm atmosphere with a single white wooden table that gives the restaurant a sense of luxury and power. There are a total of nine seats at the counter. The restaurant has seasonal bonsai trees, and pine trees are painted on the napkins served at hand and on the paper strips of chopsticks, creating a beautiful Japanese atmosphere.

Since 2017, Chikamatsu has continued to win awards in the food log awards and has recently become so popular that reservations must be made far in advance in order to get a table. The sushi is so well-made that it has convinced customers who have visited the restaurant to call it "Chikamatsu" if they want to eat delicious sushi.

After graduating from high school, he started his career in sushi by helping his uncle's restaurant. He then trained at "Sushi Kawasho" in Hakata. He is very particular about purchasing sushi so that he can offer the best seasonal ingredients. He continues to study together with his son, Ken Sakanishi, who also helps out at the restaurant.
