We use a whole piece of Piave cheese, which is a hard type of cheese from Italy. The cheese is warmed and melted before adding the pasta.
At the perfect moment when the flambé flame goes out, freshly boiled pasta is added into the cheese from the kitchen.
The first key point of Carbonara is the cheese used, which is Italian [Piave Cheese]. It is a hard type of cheese that is aged and has a strong umami flavor.
The second key point of Carbonara is [Original Fresh Pasta - Chitarra]. Chitarra is a thick pasta with square edges, similar to udon. It has a rich aroma from whole wheat flour. It is not chewy but has a firm texture.
The third key point of our Carbonara is the Aged Bacon from domestically raised pigs. In Italy, Carbonara typically uses pancetta, but at Cascina, we use aged bacon from domestically raised pigs. The bacon made with our unique method has a flavor and aroma of fat that is distinctly different from regular bacon.
