Che cosa è Sushi?: Sushi highlights the delicate balance of vinegared rice and carefully prepared seafood, with an emphasis on clean flavors and precise technique. Many counters present nigiri one piece at a time, allowing diners to notice details such as rice temperature, the cut of the fish, and a light brush of soy or a touch of citrus. Common styles include nigiri, maki rolls, temaki, and chirashi, while occasional searing, marination, or aging brings added depth. Seasonal selections often guide the progression of a meal, and some venues offer an omakase format that follows the chef’s rhythm. Beyond fish, vegetables, egg, and shellfish appear in thoughtful combinations. The experience may include conversation with the chef, pacing that builds from lighter bites to richer pieces, and a focus on texture as much as taste. Whether at a counter or a table, the appeal lies in craftsmanship and the expression of each ingredient.

The food was reasonably good, and we were able to have a pleasant time as a group. If you have high expectations, there may be some difficulties, but I recommend it as a decent place.
We visited the restaurant of a beautiful, healing gourmet woman with a sparkling smile. The cod milt chawanmushi was creamy and delicious, and went well with sake, although the flavor of the broth was subdued due to the rich sauce. The natural yellowtail with leek paste is fatty and has a strong overall flavor, so it goes well with wasabi and ume blossoms. Kawahagi liver with egg yolk sauce is characterized by its light, non-habitant flesh and the flavor of the egg yolk sauce, which goes well with sake. The natural sea bream is seared on the skin with a gas burner, but since this sushi costs more than 20,000 yen, I would like to see it seared over charcoal if I were in the mood. The sake "Hourai Colored Otoko Junmai Daiginjo" has a great sense of both appearance and taste. It is easy to drink, fruity and delicious. The bluefin squid is thick and chewy, and you can enjoy its sweetness and flavor. The kohada is fatty, moist and delicious on the tongue, but unfortunately too much air is put into the nigiri and the pieces are uneven. Yaitogatsuo tataki has a good fat content and a tender texture, but it is still a little early in the season for the best.

Savor exquisite Edomae sushi at the Michelin-starred Shiorian Yamashiro
Located in Namba, "Shiorian Yamashiro" is renowned as a Michelin-starred establishment in Ginza, offering authentic Edomae sushi. It provides a moment to enjoy beautiful seafood in a refined setting with tranquil private rooms and an open counter. The chef selects seasonal ingredients meticulously, allowing guests to enjoy a menu that thoroughly pursues quality, flavor, and presentation. One of the highlights is the exceptional sushi paired with fulfilling service.
In a shop with only a counter, it's exciting to see the cooking right in front of you. There are moments where the flames from the grilling and the gold leaf scatter lightly, making it a fun experience. The first bowl features grilled fatty tuna layered with salmon roe and sea urchin, creating a melt-in-your-mouth deliciousness. A dish rolled with rich egg yolk, tuna, and sea urchin is packed with umami that is irresistible. The hand-served eel dish has a wonderful aroma, making you want to take a big bite. The finishing chirashi is loaded with ingredients, looks vibrant, and made the experience enjoyable until the very end.
Rather than quietly sipping, it has a slightly stylish izakaya feel. The taste is good, and there is a relatively wide variety of alcoholic beverages. The customers are diverse, and I was able to talk with the person next to me and the counter staff. The atmosphere is very nice. It's not a very large place, so you can hear conversations well. I think reservations are essential.
