This course uses carefully selected ingredients such as Kyoto vegetables grown by Mr. Ishiwari in Kichijoin, fish from the Sea of Japan, and Japanese beef from various regions. The desserts are also hearty and satisfying.
The vegetables include Kyoto vegetables grown by Mr. Ishiwari in Kichijoin and pesticide-free vegetables from the chef's own vegetable garden, the fish is natural fish from the Sea of Japan, Wakayama coast, and other nearby waters, and the meat course uses carefully selected ingredients such as Ozaki beef from Miyazaki and lamb from Hokkaido.
