I ate here in 02/2025; while everything was outstanding, I’d highlight Kiyama-san’s masterful use of and respect for water, which could reflect an ever deeper care for guests. Drink pairing is a must - I was served a variety of local soju and imported/curated natural wines (the latter are surprising given cuisine but, suddenly, incredibly tasteful) pairings.
