The Tokoriko special grilled meat sauce is carefully prepared to maximize the natural flavors of the ingredients. Based on our own brewed Kintoki soy sauce, it achieves a rich and mellow umami. The flavor of true kombu enhances the taste and adds a delicate Japanese aroma. Additionally, by grilling long green onions at high temperatures, we concentrate their roasted flavor and natural sweetness. This sauce provides deep richness and abundant flavor. Fruits such as lemon, apple, and pineapple are added to refreshingly cut through the meat's fat with natural sweetness and a crisp acidity. Furthermore, the refreshing spiciness and aroma of golden ginger serve as an accent, stimulating the appetite. The mellow sweetness from the addition of brown sugar is slowly simmered, allowing the sauce to deeply penetrate the meat, resulting in a fragrant and juicy finish.
