HATAKAKU's hamo shabu is cooked slowly over a sunken hearth installed in each private room. The fatty hamo (conger eel) is light but has a delicate flavor that fills your mouth with pleasure. The broth is also made from the bones of the hamo, which gives the dish a deep and delicious flavor. Please enjoy all of the deliciousness that has seeped out from the hamo in the Nozousui (soup stock) that finishes the dish.

This is the traditional taste of HATAKAKAKU, which has been served for 100 years. Usually, boar nabe is served with red miso paste, but at our restaurant, it is served with white miso paste. First, enjoy the mild flavor as it is, then dip it in ponzu (Japanese sauce made of soy sauce and citrus juice) and enjoy the refreshing taste. There is no smell at all, so even customers who do not like wild boar can enjoy this dish.
