The menu is named after the Noh stage, which is one of the symbols of "Suigian," and is based on "Fushikaden" written by Zeami, a Muromachi period Noh actor who perfected the art of Noh. We have revived the "ozen" style of Noh cuisine here at Suigian, using dishes and plates from the famous Nagasaki ryotei restaurant "Fugirou".
