■ Nakasho Shoten, a long-established wholesale dealer with over 90 years of history, is well-versed in selecting the finest unagi. With years of experience and a track record of supplying many famous unagi restaurants, as well as operating its own restaurant, we are confident in our choice of ingredients. ■ The storage facility, known as Tateba, has been inherited from the past to preserve the quality of unagi. The unagi, which has been purged of mud using well water, is sourced from 200 meters underground to eliminate its unique odor. ■ The grilled Nakasho unagi is cooked without steaming, using high heat for a short time. This technique traps the umami inside, resulting in a crispy and fragrant exterior while keeping the inside fluffy and juicy. Enjoy the delicate craftsmanship. ■ The sauce, Nakasho's secret sauce, has been continuously added to since our founding, immersing the freshly grilled unagi completely. It creates an exceptional flavor where the fat and umami of the unagi blend together.
