The sumptuous grilled hormone and the superb tongue shabu-shabu. The tongue steak, with all the unnecessary parts trimmed off, is exquisite. You won't find it anywhere else.

The shop owner, who has mastered procurement, grills all the courses for you. Eating the tongue and skirt steak while listening to explanations about the differences in texture depending on the location is truly one of a kind.

A renowned restaurant with a high-end hormone kaiseki approach. It uses only the core cuts, stripping away everything else, and all the accompanying ingredients are luxurious!
