Sake and Chinese food have a very good compatibility, but this compatibility is still not widely known. Kawamura Sake Brewery in Iwate Prefecture (the rice used varies depending on the season) is located in Ichinoseki, Iwate Prefecture, which is the hometown of the largest group of toji (sake brewers) known as Nanbu Toji. This nigori sake has a rich flavor, but the sweetness is moderate, and the aftertaste is dry. Comment from Mala Teacher: Recommended for women and beginners of sake. Although it is nigori sake, it is not too sweet. It pairs well with dishes that have a peppery flavor, such as saliva chicken, mapo tofu, mala boiled fish, and Sichuan twice-cooked pork.

Sogen Brewery, located in the Noto region, is said to be the birthplace of Noto toji (master brewers). This sake is polished to the junmai ginjo class, characterized by a moderate body and a clean finish. Aichi Prefecture Chōchin Sake Brewery (the rice used varies depending on the time of arrival) - Glass (50ml)…300 yen - Tokkuri (90ml)…540 yen - Tokkuri (180ml)…1,000 yen. Named with the aim of creating sake that is cherished and valued for generations. Each bottle is hand-filled, resulting in a rich flavor where the umami of the rice blends with a unique acidity. Comment from Mala Sensei: The acidity pairs very well with spices and fried foods. Soft shell crab, spiced fried large shrimp, fried chicken, etc.
Kochi Prefecture Kameizumi Sake Brewery - Glass (50ml)…300 yen, Tokkuri (90ml)…540 yen, Tokkuri (180ml)…1,000 yen. Rich sweetness and refreshing acidity create a fresh taste. A flavor with a significant impact that is unforgettable after one sip. This is a year-round nama genshu. Comment from Master Mala: Similar flavor to Chinese Baijiu. Pairs well with spicy dishes like cumin and strong acidic foods such as black vinegar dishes. Recommended with jellyfish in black vinegar, beef in golden sour soup, and cumin stir-fried lamb.

Maruo Honten is located to the east of Konpira-san in Sanuki, Shikoku. The flavors drawn out by aging are deep and rich in character.
