This sake is made using 100% Bizen Omachi rice, which is said to be a mythical sake rice that is on the brink of extinction. The famous Yamada Nishiki, known as a premium sake rice, is a descendant of Bizen Omachi rice. It has a unique natural soft aroma and a harmonious balance of natural acidity and umami, providing a rich flavor. 300ml
(Kochi) This sake is produced by Shusai Bonten Brewery, which is said to have had a familial relationship with the home of Sakamoto Ryoma, 'Saitaya.' It is a super dry sake with a sake meter value of +10.0, described by Ryotaro Shiba in 'Ryoma Goes' as having a faint sweetness after drinking one and a half shō. Red / Medium body / Yamanashi Prefecture, Nirasaki City. The Kainoir variety is a unique grape for red wine in Yamanashi, born from the crossbreeding of the Black Queen and Cabernet Sauvignon varieties. It is made from 100% Kainoir grapes and aged for six months in American oak barrels after fermentation. The color is a deep ruby. The aroma has a slightly spicy impression reminiscent of black pepper, with a balanced blend of berry scents and smoky, earthy, and grassy notes derived from the barrels. The taste features a slightly strong acidity from the Black Queen variety, along with fruitiness from the Cabernet Sauvignon variety and moderate tannins.
White / Dry / Fuefuki City, Yamanashi Prefecture. 'Verdinho' means 'fresh green' in Portuguese. The Koshu grapes are harvested just before full ripeness, and the free-run juice is fermented at low temperatures. It has a pale yellow hue with refreshing aromas of white flowers and citrus, along with a moist acidity, creating a fresh and light impression. It is bottled immediately after clarification, which allows the fermentation-derived carbon dioxide to dissolve, giving a slight effervescence that matches the wine's characteristic freshness.
