When everyone looks up at the blue sky, they feel a sense of relief and kindness. This sake was named with that feeling in mind by Masakatsu Fujioka, the fifth generation president of the brewery. There is a story behind the establishment of this brand and his journey to become a toji (master brewer) and produce sake. Once, as a mid-sized brewery in Fushimi, it was sold nationwide under the brand 'Banchou', but production was halted in 1995. During that time, he honed his brewing skills at the National Research Institute of Brewing and other breweries, and in 2002, he made a fresh start. The shipping volume, which was several thousand koku during the 'Banchou' era, was only 28 koku this year. SAUVAGE means 'wildness'. This is one of the oldest varieties of rice in Japan that you can experience. It is a rice that inherits the blood of indigenous Japanese rice.
