The rich umami of Matsusaka beef is further enhanced by carefully selected salt. The salt we use is 'Nefesh Rock Salt' from the Nepalese Himalayas. Please enjoy the Matsusaka beef, grilled to a fragrant finish over charcoal, with the salt. While simple, you can fully savor the deep flavor of the meat.
At our restaurant, we procure Matsusaka beef by the whole cow, so the quantities of certain cuts are limited and can run out quickly. Therefore, the availability of these cuts is not guaranteed every day; these are the rare cuts. Be sure to take the opportunity when we have them available!
