The sweetfish, which heralds the arrival of early summer, is also known as 'fragrant fish' due to its unique aroma reminiscent of watermelon and cucumber. Its ascent up mountain streams is a summer tradition. Please enjoy the seasonal sweetfish grilled with natural salt in its entirety. In autumn, you can savor it as sweetfish with roe.
In recent times, it has become difficult to feel the 'seasonal flavors', but please enjoy tempura that allows you to experience the seasons, such as spring's 'sakura shrimp and wild vegetables', summer's 'pike eel and Kamo eggplant', autumn's 'matsutake mushrooms', and winter's 'shirako'. We also have many other dishes prepared for you.
Kuroge Wagyu offers a unique flavor and tender texture. We prepare it using cooking methods suited to each cut, such as misuji, rump, upper lean, and sirloin. Enjoy it grilled with 'Hoba Miso', or with a sauce based on 'Kaeshi' used for soba dipping, or simply seasoned with salt and pepper, served with lemon and fresh wasabi. Please enjoy it with your preferred dish.
Serves 4, packaged in a paulownia box. *Reservation required (by the day before). Shelf life: 3 days under refrigeration. Please consider our 'warabi mochi' as a souvenir when you return home. You can enjoy 'completely handmade warabi mochi' made from carefully selected ingredients at home.
