The dishes really bring out the natural flavors of the ingredients, and I was moved from start to finish. The attention to detail in fermentation, temperature control, and aging is evident, resulting in a natural sweetness without the need for added sugars. The saltiness is moderate, yet it doesn't leave you wanting more, clearly reflecting the care put into the work. The pairing centered around natural wines is challenging, yet it perfectly complements the dishes, bringing everything together even more. I was surprised by a dish that used a generous amount of truffles, and I enjoyed the entire course without leaving anything behind. I heard that the menu changes monthly, and I'm looking forward to discovering new things while hearing about the ingredients.
